The Apple of my Eye is how Jenny Morris feels about the versatile Pink Lady apples that are now in season.
This time of year has always been special for me. Not only is it the month that we celebrate our mothers, but apple season has begun. That means apples crisp and juicy, straight from the farm and no more cold storage, spongy, bruised fruit.
There is one apple in particular that I love to cook with, eat fresh, chop into salads, turn into juice…whatever takes my fancy. That apple, ladies and gentlemen, is the beautiful, blushing Pink Lady. For me the Pink Lady is the cream of the crop when it comes to taste and texture and my first choice when it comes to cooking an apple into a dish. They are also homegrown, which makes me rather happy – no food miles on the clock!
Pink lady apples are only available during the season so the price is good, quality superb and there is an abundance while stocks last. The great news is they are available now, so from May to November you can eat and cook up a storm with these delicious blushing girls.
My mother loved apples and we were “forced fed” apple pies, crumbles and cakes from the time we were able to chew. I’m not sorry for it, because she taught me to love this versatile fruit. She would have been in her element if Pink ladies were around then. Apples were all about finding the perfect one with the perfect texture for her.
My father would always gather my brother and sister and I in the kitchen and get us chopping and peeling to prepare a Mother’s Day meal for our mother. I truly believe that this was her only day off in the year.
It is the one day of the year that most moms get to do very little, or nothing if they are lucky. It’s a day where we show our gratitude and love for our moms in special little ways. I loved being part of the meal preparation for her special day. I loved how the love shone out of her eyes when she thanked us all for making her feel so special.
So whether it is your grandmothers, stepmothers and mothers-in-law, make them feel special. Gather the children around you and let them make something easy and special for these special ladies. Dads, I’ve made it easy for you too by the way – lots of stirring and very little chopping.

Pink Lady ® Apple Cup Cakes
150g brown sugar
150g self-raising flour
1 cup grated Pink Lady® apple with skin
1 teaspoon ground cinnamon
100 g coarsely chopped pecan nuts
Pinch of salt
- Cream butter and brown sugar together.
- Add eggs one by one.
- Add rest of dry ingredients (excluding milk) and mix to a thick, creamy consistency. Add the milk.
- Place paper cups in muffin pan and spoon mixture to ¾ full.
- Bake for 20 – 30 minutes at 180°C and decorate to taste.
