Refurbished in 2013 at a cost of R80 million, Rosebank’s Hyatt Regency is now regarded as one of the country’s leading hotels with its flagship restaurant, oneNINEone, setting a new standard in hotel dining in Johannesburg.
As part of its international programme of skills transference and training amongst chefs, the Hyatt Hotel Group is bringing one of its most celebrated Middle Eastern chefs to Hyatt Regency Johannesburg.
Homs-born Syrian chef Hasan Majar has worked his way up from commis chef in Aleppo in his native country to the position of sous chef at the Park Hyatt in Dubai, where he specialises in pan-Arabian cuisine.
Over and above its regular menu oneNINEone will be hosting Hasan in celebration of Middle Eastern cooking, where he will work with the hotel’s executive sous chef Shaniel Dinna and his team to ensure local diners get a feel for the authentic flavours of real Middle Eastern food, as well as to share their knowledge and skills with Hyatt Regency’s chefs. It will be offered as an à la carte menu and will embrace all that is great about genuine Middle Eastern cuisine.
Inspired by the great home cooks in his life, Hasan prepares dishes that are both familiar and exotic. At the Park Hyatt in Dubai, his menu features signature dishes such as fresh beetroot with sesame paste and yoghurt; chicken livers with grenadine syrup; samak harre, a Lebanese grilled whole sea bass dish with a spicy chilli sauce; grilled lamb shish kebabs; and the fragrant milk pudding mouhallabia, served with chocolate.
Chef Shaniel Dinna, who heads up oneNINEone, says the Middle Eastern Week is extremely exciting as he and his staff will have the opportunity to work with one of the best Middle Eastern chefs in the Hyatt Group. “People can expect dishes that are not ‘conventional’ Middle Eastern food, – but rather dishes that are eaten daily by people in the Middle East.”
On the two Saturday nights, May 23 and 30, there will be a Middle Eastern buffet – which better reflects how Middle Eastern people eat; tasting from many dishes rather than the linear three-course dining etiquette of the west.
oneNINEone’s Business Lunch menu, from Monday to Friday, May 25 to 29, will also be Middle Eastern influenced. “All the dishes, sauces, pastes, dips and condiments will be made from scratch by our visiting chef Hasan,” says Dinna. “All I can say is that the week promises authentic Middle Eastern food of the highest quality.”
